Update logistics

As 1.12.2 has been in use for about 4 years, updates should be a priority. However, updating to the latest version takes a lot of work, due to the changes between 1.12.2 and 1.21.1. but even then, it would definitely be worth it
Performance
Despite 1.12.2 being known as the most stable version of Minecraft, it doesn't perform that well (on servers at least). Some of the performance improvements would be:
Java 21+
- Improved memory management as well as memory leak fixes.
1.20+
- Improved lighting system, allowing for smaller lag spikes from placing and breaking blocks
- More memory leak fixes :D
All those may seem small, but could really help performance, maybe ending the decade old lag.
Indirect Server changes
Iron farms
The biggest server change would be public iron farms. Due to iron farms producing 10x the iron in a smaller space, iron farms won't be limited by the 40 iron an hour per farm, as well as being cheaper and easier to maintain. This would end the monopoly on iron, improving server experience
Diamonds
Diamonds will become MUCH more common due to the fact that even if all exposed diamond runs out, the fact that diamonds are super common when strip mining will reduce their value, allowing diamonds to become a much more precise currency.
Villagers
Due to trade re-rolling, businesses that sell enchanted books like BookNook to go out of business.
Totems
As totems of undying became renewable in 1.14, This would allow there to be legitimately obtained totems to finally exist, 8 years after being added to Minecraft.
Direct Server changes
Nether
After the update, the Nether would be reset, similar to The End after the 1.12.2 update.
Deprecated Plugins
Exec would be deprecated.
Recommended changes
Rework of grief rules system
Make killing villagers considered grief, this would prevent what happened to the iron reclaimer.
